Spinach Squares

Spinach Squares

by Linda Morgan

Yield: 8 servings Preparation Time: 15 minutes
Cooking Time: 25-30 minutes

1 cup flour
1 teaspoon salt
1 teaspoon baking powder
2 eggs, beaten
¼ cup (= ½ stick) butter, melted
1 cup Milk
½ cup chopped onion
pepper to taste
12 oz shredded Cheddar Cheese (white sharp is best- not orange) (get block and shred yourself – is better than the bagged cheese)
1 10-ounce package frozen chopped spinach, thawed and drained (squeeze water out)

Preheat oven to 375 degrees. Mix together flour, salt, and baking powder. Add eggs, milk and butter; blend well. Stir in onion, pepper, cheese and spinach. Pour into 9/13 greased pan. Bake for 25 to 30 minutes. Can bake 33-34 if you like them browner. Remove from oven and allow to set before cutting.

NOTE: This tastes like spinach quiche and can be served as a main dish, side dish or appetizer. Best warmed but can be served cold. Freezes well, cut in 2×2 squares.
