Peanut Butter Eggs

Peanut Butter Eggs

by Carla Tuhacek

1 3/4 c. peanut butter (18 oz. jar)
1/2 c. butter
1 tsp. vanilla
6 oz. pkg. confectioner’s sugar
6 oz. (1 c.) chocolate chips
2 tsp. vegetable shortening

Line baking sheet with waxed paper. Mix peanut butter, butter, vanilla and sugar with hands to form smooth dough. Mixture will be very stiff. Shape into balls using about 2 tsp. of dough in each. Place on waxed paper and refrigerate. In microwave, melt together chocolate chips and shortening. Insert a toothpick into each egg and dip into chocolate so that 3/4 of the ball is covered. Return to waxed paper and refrigerate at least 30 minutes or until chocolate is firm. Makes about 5 dozen eggs.
