Never Fail Guac

Never Fail Guac

By: Jared High

  • 1 large Shallot
  • 1.5 Tbsp lime juice (or juice of 2 fresh limes)
  • 1 Tbsp chopped parsley
  • 2 ripe avocados (Preferably a dark kind like Hass)
  • 1 Serrano pepper
  • 1ish tsp kosher salt (½ if using table salt)
  • Tortilla chips
  • Knife
  • Cutting board
  • Medium size spoon
  • Measuring spoons
  • Large bowl
  • Strainer/sieve/potato masher/large fork

Remember to wash your hands when you’re making raw food.

Choosing the right avocado. It should feel squishy yet firm, similar to the palm of your hand. If they are harder, leave them at room temperature, not too hot, and wait. If they are perfect and you want to continue to save them, they have two or three days in the fridge. If they are softer, you can use what is good but they might be bad.

Finely chop shallot and parsley. Put in a bowl and mix in the lime juice. Set aside

Cut avocados lengthwise going around the pit and split the avocado leaving the seed on one side. One side with seed, place your index and middle fingers on either side of the pit on the flesh side, then your same hand’s thumb on the middle of the pit on the skin side. Keep your index and middle fingers firm but try not to squish the avocado. If you would like to watch how, here is a link to a video tutorial go to the address below and scroll down to the tik tok video: https://www.lifehacker.com.au/2021/06/how-to-properly-remove-avocado-seeds/ . Next, scoop the avocado out with a medium-size spoon onto a strainer or sieve and smooth through (if you don’t have one you could smoosh with a potato masher or big fork). Mix into a bowl with lime juice and shallots.

Cut Serrano in half lengthwise (remove seeds and white connecting inner flesh for less heat, go ahead and chop them whole if you want all the heat). !Careful handling the peppers, your hands could get hot! Chop the peppers. Mix into the bowl.

Add salt slowly to taste. Mix salt in and taste adding more until it is to your liking, make sure to use a clean spoon each time you taste.

Ready to serve immediately with your favorite tortilla chips. If you want to save, spread guac out smoothly in an appropriately sized bowl, sprinkle on a little lime juice and press cling wrap up to the guac; to make it airtight.
