Crème Brûlée

Crème Brûlée

by Debara Valeri

Nancy made this for dinner once and it was delicious.

2 egg yolks
1 whole egg
1.5 oz. brown sugar
1 cup heavy cream
1⁄4 tsp. salt
3⁄4 tsp. vanilla

Mix but do not whip the egg yolks, egg and brown sugar. Heat the cream to scalding point (when bubbles start to form). Gradually add cream to the egg mixture while stirring. Add vanilla and salt. Strain custard mix. Pour into 5 oz. custard cups. Place cups in a low sided baking pan and fill with water half way up sides of cups.

Bake at 350° about 30 minutes. Should be firm in center. Do not overbake. Remove and cool. Glaze with sugar under the broiler.
