Zucchini Bread

Zucchini Bread

by Carla Tuhacek

Julia and I were laughing at this recipe in my old cookbook. I guess I’ve been making it for a lot of years and keep altering it. Here’s the basic recipe, but feel free to experiment!

3 eggs
2 cups sugar (or 1 cup white sugar and 1 cup brown sugar)
1 cup oil (vegetable or canola)
2 tsp vanilla
1 tsp salt
1 cup chopped walnuts
2 cups grated zucchini (I often add more)
1 tsp cinnamon
3 cups flour
1 tsp baking soda
1 tsp baking powder

Mix well and put in 2 loaf pans that have been well greased and floured.

Bake 350 degrees for 45-50 minutes or until toothpick comes out clean.

Success! Got a little burned on the bottom because our oven has no way to regulate temperature, so it cooks everything at a minimum of 400 degrees. We just shaved off the burned parts and it was exquisite.
