Mrs. Easch’s Peach Cobbler

Mrs. Easch’s Peach Cobbler

by Carla Tuhacek

My friend Kathy got this recipe from a woman who owns a local peach orchard. It’s wonderful served warm with vanilla ice cream.

1 1⁄2 cups flour
2 tsp. baking powder
1⁄2 tsp. salt
1 cup sugar
1⁄4 cup shortening
1 egg
1/3 cup milk
1 Tbsp. tapioca
1 Tbsp. lemon juice
2 Tbsp. butter
4-6 cups peaches, peeled and sliced

Mix flour, baking powder, salt and sugar. Cut in shortening. Beat egg and milk. Combine with flour mixture and stir until flour is damp. Pour peaches into greased shallow 13″ x 9″ pan. Sprinkle with tapioca and lemon juice and butter. Drop dough in six mounds onto peaches. Sprinkle with a little sugar and bake 400° for 30 minutes.
