by Ken Valeri

1 cup cornmeal (polenta or grits, called both)
1 cup flour
1 cup buttermilk
1/2 cup sugar (whole cup for sweeter bread)
1 tsp baking powder (double-acting)
2/3 cup corn oil
1 tsp salt
1 small can corn – white niblets
1 egg

Mix all ingredients with a fork. Warm a medium cast iron or nonstick pan. Heat the pan before adding the ingredients (spray pan or thin layer of oil) Preheat to 400 degrees F, then bake for 30-35 mins. Use a toothpick to test- once it doesn’t stick to the toothpick it is ready.
