Fish Marinade

Fish Marinade

by Ken Valeri – Updated 1/26/2022

1 – 2 lbs. any fish (about 1/2″ – 3/4″ thick)
1/4 cup high quality soy sauce
1/4 cup of Ponzu sauce
1 tsp. Oelek or any high quality hot red chili paste (this amount will give you medium spicy fish – use more or less to suit your personal taste)
2+ tbsp. Sesame oil

Cut fish into desired size and marinate for 15 minutes ONLY then cook immediately. I grill my fish on high heat in an oven-ready metal handled pan for only 2 minutes total, browning on each side. I then finish cooking in a 350F preheated oven for 4 or 5 minutes and remove and serve immediately onto a warm plate. Note: You want to cook your fish only until it starts to flake with a fork because it will continue to cook for a minute or so, then be ideal when served. This isn’t easy to do but take it from me – you should always try to take it out of the oven early because you can always put it back in but you can NEVER un-cook it! There is absolutely nothing worse than tough, tasteless, over-cooked fish!!!
