Buckeye Balls

Buckeye Balls

by Carla Tuhacek

These delicious treats taste like peanut butter eggs… only better! Kids love to help with them because you mix the ingredients with your hands.

1 3⁄4 cups peanut butter (18 oz. jar)
1⁄2 cup butter
1 tsp. vanilla
16 oz. pkg. confectioner’s sugar
6 oz. (1 cup) chocolate chips
2 tsp. vegetable shortening

Line baking sheet with waxed paper. Mix peanut butter, butter, vanilla and sugar with hands to form a smooth dough. Mixture will be very stiff. Shape into balls using 2 tsp. of dough in each. Place on waxed paper and refrigerate. Eat a handful of chocolate chips. In double boiler (or microwave) melt remaining chocolate and shortening. When smooth, place into small bowl. Insert toothpick into ball and dip into chocolate so that 3⁄4 of the ball is covered. Return to waxed paper and refrigerate 30 minutes or longer until chocolate is firm. Makes 5 dozen.
