This is Nancy’s recipe too. It is a favorite when the family is home for a special breakfast.
1 cup packed brown sugar
1⁄2 cup butter
2 Tbsp. light corn syrup
2 large tart apples, peeled & sliced 1⁄2″ thick
1⁄2 tsp. cinnamon
3 eggs, beaten
1 cup milk
1 tsp. vanilla
9 slices stale French bread (cut 3⁄4″ thick)
In a small saucepan cook sugar, butter, syrup and cinnamon until thick (5-7 minutes).
Pour into a 13″ x 9″ greased pan. Arrange apples on top. Mix beaten eggs, milk, and vanilla. Dip bread slices in egg mixture for one minute. Place bread on apples, cover, and refrigerate overnight. Remove pan from refrigerator for 30 minutes before cooking. Bake uncovered at 350° for 35-40 minutes.
