Country Apple Coffee Cake

Country Apple Coffee Cake

by Carla Tuhacek

My friend Wendy made this for a “ladies night out”, and I just had to have the recipe!

2 Tbsp. soft margarine, divided
1 1⁄2 cups chopped peeled apple, divided
10 can FLAKY biscuits (Hungry Jack, for example)
1/3 cup brown sugar
1⁄4 tsp.cinnamon
1/3 cup light corn syrup
1 egg
1⁄2 cup pecan halves

Glaze:
1/3 cup powdered sugar
1⁄4 tsp. vanilla
1-2 tsp. milk

Heat oven to 350°. Use 1 Tbsp. butter to grease 9″ round cake pan. Sprinkle 1 cup of apples in bottom of pan. Separate biscuits and cut each biscuit into quarters. Arrange biscuits point side up on top of apple in pan. Sprinkle remaining apple on top. Combine 1 Tbsp. margarine, brown sugar, cinnamon, egg and corn syrup. Beat 2-3 minutes or until sugar particles disappear. Stir in pecan pieces. Spoon over biscuits. Cook 350° for 35-45 minutes. Cool 5 minutes. Make a glaze ingredients and drizzle over cake.
